5 Easy Dinners From Whatever Is in Your Fridge

Scenario one: eggs, a tomato, day-old rice. Scenario two: chicken breast, half a lemon, one zucchini. Scenario three: "honestly, just condiments." Every fridge is one of five situations — and each has a dinner hiding in it.

1. The leftover-rice rescue (eggs + rice + anything green)

Day-old rice is fried-rice insurance. Eggs for protein, whatever green vegetable is dying for attention, soy sauce for the anchor. Hot pan, eggs scrambled and removed, rice pressed flat until it crackles, everything back in, sauce around the edge of the pan — not the middle, or it steams.

2. The lemon-chicken reset (chicken + lemon + any vegetable)

Slice the breast thin so it cooks in four minutes a side. Deglaze the pan with the lemon, throw the zucchini in while it is still glossy. One pan, one acid, done in twelve minutes.

3. The condiment-stand dinner (pasta + half-empty jars)

Half-empty jars of pesto, olives, sundried tomatoes are pre-made sauce. Boil pasta, reserve a cup of the water, toss everything in the biggest pan you own. The starchy water turns the jars into an actual sauce.

4. The "just potatoes" night

Potatoes, onion, any sausage or chickpeas: cube small, roast hot (220 C / 425 F), stir once at fifteen minutes. Crispy edges are the entire trick — small cubes, high heat, do not crowd.

5. The tomato-egg classic (eggs + tomatoes + a pinch of sugar)

If you have never tried the Chinese way: tomatoes broken down into a jammy sauce, eggs scrambled soft, a pinch of sugar to round the acid. Over rice. Fifteen minutes, three ingredients, zero failures.
